
Sticky Sesame Beef
with Crunchy Cucumber
This is a 20-minute dinner that tastes like it took an hour. Thin slices of lean beef are seared hard and fast, then tossed in a sticky, glossy glaze of soy sauce, honey, sesame oil, ginger, and garlic. The cool, crunchy cucumber on the side is the perfect contrast.

Searing Tip
Make sure the pan is very hot before adding the beef. Don’t move it for the first 60 seconds — that’s where the caramelisation happens. Overcrowding the pan will steam the meat instead of searing it.

Prepare the Cucumber
Slice the cucumber into thin rounds and toss with a small pinch of salt. Set aside in a bowl to draw out moisture while you cook the beef.

Sear the Beef
Heat neutral oil in a large pan or wok over high heat until smoking. Add the beef in a single layer and sear without moving for about 60 seconds. Flip and cook another 30 seconds until browned. Remove and set aside.

Build the Glaze
In the same pan, lower the heat slightly and add garlic and ginger. Stir for 15 seconds, then pour in soy sauce, honey, rice vinegar, and sesame oil. Let the sauce bubble and thicken for about 30 seconds. Return the beef and toss to coat evenly.

Plate and Garnish
Arrange the sticky beef on a plate with the cucumber alongside. Sprinkle with sesame seeds, sliced green onions, chili flakes, and coriander if using. Serve immediately.
